We like to think ginger is a superhero...but we are probably a bit bias. Ginger is a unique and special ingredient that has been known to help with a myriad of health issues including nausea, and is a loved ingredient people turn to help fight off cold and flu symptoms as well as to boost immunity.

Ginger growing commences with planting in September using golf ball sized pieces cut from rhizomes (root-like subterranean stems) of the previous year's crop. We select the best, cleanest possible seed we can get and cut it into pieces, ready for planting. The ginger crop is systematically fertilised and continually watered through sophisticated irrigation systems. Our range of products requires the ginger to be harvested at two distinct times, with the early harvest being ideal for baking and snacking ginger, and the late harvest perfect for our cordials, ginger beers, alcoholic beverages, health and wellness range and export products.

The tender first-harvest grade ginger is carefully stored, using technology that allows it to be held with minimal deterioration for processing throughout the year, thus guaranteeing consistent product quality. The ginger is graded to detect fibre content at varying percentages. Candied, syruped, glace and crystallised ginger are further processed in the famous open vat system. The open vat allows the ginger to develop a juicy texture as the syrup penetrates through the ginger pieces. This combined with the evaporation of moisture from the vats results in a better development of the rich ginger taste, through the caramelisation of sugars and the concentration of the natural ginger flavours.

Late harvest ginger root is dried in a dehydrator to supply dried ginger for spice, oil and oleo-resin extraction for use in flavourings, essences and fragrances. These fragrances are widely used particularly in the manufacture of ginger ale, ginger beer, ginger wine, ginger perfume, ginger essence and many more, some are probably even yet to be discovered.

Ginger Fact: Did you know that there are hundreds of types of ginger but only three are edible? The rest are the ornamental type that produce beautiful flowers. The edible gingers do have a flower but they aren't as colourful and striking as the ornamental gingers.

Usage

Add to marinades, whipped cream or yoghurt; use as a glaze on waffles, pancakes and ice-cream; or mix with fruit juice, cocktails and milkshakes. Pairs perfectly with melon and almost any fruit.

The sauce can be served cold or heated and served over warm puddings. If you feel adventurous it can even be added to curries for a sweet, ginger kick.
