Dashi is the very foundation of Japanse cuisine, made by simmering natural ingredients such as kelp or shiitake mushrooms. Rich in umami and sweetness simultaneously, only a small amount can add depth of flavour to a variety of different sauces. A delicous soup base made with meat-free stock.

UDON SOUP: Mix 50ml of Dashi Soy Sauce into 200ml boiling water, serve with cooked udon noodles.
